The Fat Content of Gelato Compared to Ice Cream...



Gelato typically is comprised of approximately 3 to 10% fat depending on the added in ingredients. For example, adding in nuts, milk, candies or cream would obviously increase the fat content.

As for regular ice cream as in North American style ice creams, they contain much more fat than gelato. The fat content for regular ice cream can range anywhere from 16% to 30% fat totals.

The higher fat total is a result of the cream used in the production of ice cream. The high-end ice creams producers tend to use more cream, whereas upscale gelato stores combine higher quality ingredients along with milk, water or soy.
